Hillbilly One Pot

  1. 1 1/2 pounds ground beef
  2. 4 cups beef broth
  3. 3 (15.5-ounce) cans black eyed peas, not drained
  4. 3 potatoes, peeled, diced
  5. 1 onion, chopped
  6. 1 celery stalk, chopped
  7. 1 carrot, chopped
  8. 3/4 teaspoon smoked paprika
  9. 1 teaspoon salt
  10. 1/2 teaspoon black pepper
  1. In a soup pot over medium heat, saute ground beef 5 to 6 minutes, or until browned. Add remaining ingredients and bring to a boil. Reduce heat to low, cover, and simmer 30 to 35 minutes, or until potatoes are fork-tender.
