      Crispy Brussel Sprouts

      Ingredients

      • 1 lb Brussels sprouts (trimmed and sliced in half)
      • 4 oz pancetta
      • 1 cup ponzu sauce
      • 1 cup sugar
      • 1/2 cup water
      • Toasted panko breadcrumbs
      • Juice of 1 lemon
      • Salt and pepper to taste

      Trim brussels sprouts

      Roast in the oven for 30 minutes

      Add brussels sprouts to skillet with pancetta and ponzu sauce for 5 to 7 minutes

      Toss until golden brown

      Poached Pears

      Ingredients

      • 8 Bosc pears, skinned and left whole
      • 1 bottle dry white wine
      • 3 cups simple syrup
      • 2 tablespoons roughly chopped fresh ginger
      • 1 teaspoon ground cinnamon
      • 1/2 teaspoon allspice
      • 1/4 teaspoon salt
      • 8-10 dried hibiscus flowers
      • Mint leaves for garnish

      Directions

      1. Skin pears and and add white wine, simple syrup, ginger and hibiscus flowers to pot

      1. Add ginger, allspice and salt

      1. Simmer for 15 to 20 minutes until pears are tender

      1. Remove pears to plate and garnish with fresh mint
