Crispy Brussel Sprouts
Ingredients
- 1 lb Brussels sprouts (trimmed and sliced in half)
- 4 oz pancetta
- 1 cup ponzu sauce
- 1 cup sugar
- 1/2 cup water
- Toasted panko breadcrumbs
- Juice of 1 lemon
- Salt and pepper to taste

Trim brussels sprouts

Roast in the oven for 30 minutes

Add brussels sprouts to skillet with pancetta and ponzu sauce for 5 to 7 minutes

Toss until golden brown

Poached Pears
Ingredients
- 8 Bosc pears, skinned and left whole
- 1 bottle dry white wine
- 3 cups simple syrup
- 2 tablespoons roughly chopped fresh ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon salt
- 8-10 dried hibiscus flowers
- Mint leaves for garnish
Directions

- Skin pears and and add white wine, simple syrup, ginger and hibiscus flowers to pot

- Add ginger, allspice and salt

- Simmer for 15 to 20 minutes until pears are tender

- Remove pears to plate and garnish with fresh mint
