White Bean French Onion Soup

Ingredients
- 3 onions (diced)
- Pinch of salt
- Pinch of oregano
- 1/4 cup melted butter
- 2 - 14oz. cans of white beans (rinsed and drained)
- Pinch of pepper
- 2 teaspoons of thyme
- 6 cups of vegetable stock
- Croutons
- Parmesan cheese
Directions

Rinse and drain the canned beans

Dice the onions

Add onions, salt, and melted butter to your slower cooker

Stir until the onions have caramelized

Add the beans, oregano, pepper, thyme, and vegetable stock and continue to cook for 3 hours on high.

Garnish with croutons and Parmesan cheese
